Banana Pie

        Tadaaaa..my ___ pie project in egypt.hehe.Before ni selalu sangat buat apple pie kat sini.heheh.Disebabkan Baba(tuan rumah) bagi cookies pagi raya hari tu,kami pon balas la dengan Banana Pie ni haaa.Recipe dalam ipon tu Blackberry Pie tapi i suke2 je modified jadik Banana Pie.Kite yang buat die.konpem jadik punye.hahaha~Tapi pastry atas ni nmpk comot skit sebabnya dah letih sangat dengan kejadian di siang hari--open house 3-4 bijik rumah kawan-kawan.Lenkali saya buat cantik-cantik yeah.huhu~lets cekidautttt the recipe yaw :D

Ingredients :

Filling :
1 kg Banana-peeled and cut into slices
3/4 cup of sugar
2tsp ground cinnamon
1tbsp plain flour

Crust/Pastry
3 1/2 cup of plain flour
1 cup castor sugar ( i reduced to 3/4)
1 1/2 cup chilled butter - chopped
1 large egg
2-3 tbsp of cold water
pinch of salt and sugar

Method :

For Filling :

Combine banana,sugar,gounded cinnamon,flour and 3/4 cup of water in a pan.Cook on low heat until the sauce thickened

For pastry :
  1. Place the flour,sugar,chopped butter and salt in the bowl.Process it until the mixture resembles breadcrumbs-like.Add cold water in between the process.
  2. Add egg and process until the dough start to combine together
  3. Shape into disc and cover it with plastic wrap.Place in fridge for half/ 1 hr.
  4. After the dough is set.Roll out two third the pastry on a lightly floured surface.Line pie dish with the rolled pastry.Trim excess and reserve in fridge for 30 min.Brush the base and side of pastry with the whisked egg white.
  5. Spoon the banana filling into the pastry case.
  6. Repeat step 3 to place over the pie dish.Press the edges with fork to seal.Trim excess pastry.Brush the pie with egg yolks/egg white.
  7. Top with sugar *optional*
  8. Bake for 35-40 min untill the pastry is crisp and golden.Set aside for 10 minutes to cool.Cut into wedges.
  9. Can be served with cream/vanilla ice cream..nyum nyummmmmm!
