Butterscoth Muffins

Yeay,finally i managed to make my own style of butterscotch sauce,which is less sweetened :) Semalam buatkan muffins ni utk kakak2 super senior yang dah nak pulang ke Malaysia for good.Seriously, sebak.Entah. Mungkin sbb layanan diorang dah macam adik kandung sndri kot?dan few weeks being "nannies" @ baby sitter for Nuha.Rasa sedihnyaaaaa Y_Y.Stay cute sayang,I will miss ur cheeky smile dan tangan kepak-kepak dan meraung tak ingat dunia sampi penat lepas tu terus lena tertidur bila kena dodoi manja2 :')


iAllah moga ukhuwwah yg terbina ini hingga ke syurgaNya.Moga2 nnt dapat jumpa semula di Malaysia,.Who knows,Malaysia tu cinonet je,pusing2 mesti jumpa jugak nnt.As a MO and HO mungkin.jangan buli kami nnt ye kakaks :')



so here, the recipe for the butterscotch muffin,I thinks it will be more perfect if u can substitute some raisins in the muffin's batter.Try it,u wont regret !

Muffins
  • 2 1/2 (375g) cups self-raising flour
  • 1 cup tightly packed brown sugar
  • 1 1/4 cups (310ml) buttermilk
  • 90g unsalted butter, melted
  • 1 egg, lightly beaten 
  1. Preheat oven to 180°C. Grease a 12 hole (1/2 cup/125ml capacity) muffin pan with cooking spray.
  2. Sift flour into a large bowl and stir in sugar. Whisk buttermilk, melted butter and egg together. Add to flour, mix until just combined. Do not over-mix.
  3. Divide mixture evenly between muffin pans until three-quarters full. Bake for 20 minutes or until golden in colour and cooked when tested. Cool for 5 minutes then turn out onto a wire cake rack.
 
Butterscoth Sauce
  • 1/2 C sugar
  • 3 tbsp water
  • 1 C whipping cream
  • 1 1/2 C milk
  • 1/2 C Cheese spread-optional
1. Meanwhile, place sugar  in a medium-sized saucepan. Stir over low heat with a wooden spoon until sugar has dissolved. Add water. Simmer without stirring until a caramel colour.

 2. After everything has resolved,add whipping cream , milk and cheese spread.Stir until the texture is smooth.

3.Add butter and continue stir until slightly thickened. Serve warm muffins drizzled with caramel sauce.
p/s : or, u can fold in the butterscoth into the muffins batter,but please reduce sugar for the batter into half :)

buat sendiri je angah :)
kalau dalam resipi ni guna 1 1/4 C buttermilk kan,maksudnya 1 1/4 C susu + 1tbsp cuka,biarkan dalam 10 min and boleh guna nnt :)
